I used to work at a restaurant in Santa Cruz, California, called Seychelles. It was owned and operated by Cindy Lepore. She had a collection of recipes that I really liked, but I didn't write many of them down. One of them was called Coriander Chicken. For the lunch service, we had on the menu coriander chicken sandwiches on homemade bread. All I remember about it was that it had an interesting flavor, and was bright yellow. So I'm experimenting around trying to find figure out a recipe that is yellow, involves chicken, and tastes good in a sandwich. === experiment #1 === {{{ broil 1 skinless chicken breast brush with butter sprinkle with salt and pepper broil 5 minutes or less on each side (until done and tender) Once cooled, dice chicken meat into a bowl and add: 1 tsp soy sauce 1 tsp olive oil 1/2 tsp sesame oil 1/2 tsp termeric 1/2 tsp ground coriander 3 chopped scallion onions salt and pepper to taste }}} Result: the mixture was pretty good on a bun. I used scallions because I didn't have any other kind of green filler like cilantro or parsley. I can imagine using those as variations in the future. I might try adding sesame seeds, but it would change the texture. Yeast flakes might make the taste a little more creamy.
