Oatmeal Butterscotch Cookies
6 oz butterscotch morsels 3/4 c butter 2 c oatmeal 1 c flour 1 tsp baking soda 1/4 c sugar 1/2 c brown sugar Dash of salt 1 egg
Preheat oven to 350 degrees. Whip together butter and sugar. Whip in the egg and the vanilla.
Mix together flour, baking soda, and salt, and add to mixture. Add morsels.
Spoon out tablespoon sized scoops 1 inch apart onto greased cookie sheet. Bake 8-10 minutes.
notes: 1.) As a slight enhancement, take an extra tablespoon of butter, and a spoon full of butterscotch chips and melt them together to make a liquid. While lukewarm, whip this mixture into to the butter sugar mixture. 2.) If you like white chocolate chips, add a few ounces of white chocolate chips to the mix.
