Buttermilk Biscuits
These biscuits can be made with real buttermilk, or regular milk with a splash of vinegar.
2 cups all-purpose flour 2 & 1/2 tsp baking powder 1/4 tsp baking soda (optional) 1/2 tsp salt 5 Tbl cold butter 3/4 cup buttermilk 3 Tbl Honey (optional)
Preheat oven to 400 F.
If you don't have real buttermilk, make your own buttermilk by adding 2 tsp white vinegar to 3/4 cup milk.
Mix dry ingredients. Cut the butter in small chunks and add to the flour mixture. Some people like to freeze the butter and use a grater. Use a pastry cutter, to cut the mixture into a meal consistency. Mix the honey into the butter milk, and add to the dry ingredients to form a dough.
Turn out onto a floured bread board and knead just enough to form into a ball. Roll into a rectangle 1/2" thick. Use a roller or your hands. Fold the rectangle by thirds, like a letter for an envelope (1). Roll into another rectangle, and repeat (2). Roll into a rectangle 3/4" thick. Use a biscuit cutter to cut biscuits with a straight downward motion (don't twist). Place them onto a parchment paper, or prepared cookie sheet, and place in oven for 12 minutes.
