Pizza Dough
Pizza Dough with Kitchen Aid mixer
1 cup warm water 0.25 ounces yeast (or 1 packet, or 7 grams) 1 tsp sugar 1 tsp salt 1 Tbl olive oil 2 1/2 to 2 3/4 cups tipo 00 flour
Add water, yeast, and sugar to the bowl. Mix around until yeast is dissolved. (I use a wooden spoon).
Add Salt and Oil. Mix until salt is dissolved.
Add 2 & 1/2 cups flour and mix with dough hook, 5-7 minutes, until all ingredients are blended. If the dough seems too wet, add flour 1 tablespoon at a time (or if it seems too dry do the same with 1 tablespoon of water). In my experience, the dough will reach a decent consistency but still stick to the sides of the bowl. I scrape it onto a floured surface and knead it by hand for a few minutes. Form a ball and drop it into an oiled bowl. Let it rise until double (usually an hour). Punch it down and divide it as desired. I use it to make 4 little 9 inch pizzas.
