Fresh Pasta Dough
3/4 cup Semolina Flour 1/4 cup white flour 1 egg 1 Tbs olive oil 1 Tbs water 1/2 tsp salt
Measure flour onto a dough rolling surface and sprinkle the salt into it (I use a wooden cutting board). Make a little mountain with a crater in the center. Crack the egg into crater. With a fork start mixing the flour into the egg from the sides. Sprinkle oil and water in as required. Knead for a minute or two. Wrap in saran wrap and let rest 15 minutes to overnight. Unwrap and start rolling.
